Bellissimo Burgers
Rebeccah Marsters and Melissa Brinley divide up samples for a taste test comparing five different preparations of portobello burgers. The recipe, which Rebeccah is developing for Cook’s Country, hasn’t been published yet, but if you’re craving something savory and meaty, try our Skillet Burgers with Sautéed Onions and Horseradish. These simple indoor burgers are a great way to satisfy cookout cravings during the colder months. Minced garlic mixed into the beef makes these patties especially flavorful.

Herbed Roast Beef

If prime rib is not in your budget for the big holiday meal, we think top sirloin roast is an excellent (and much more affordable) option. Dress up the holidays with our Herbed Roast Beef: We developed an herb mustard spread and incorporated it directly into the roast. We also applied an herb butter to the cooked roast while it rested. The butter melted and mingled with the meat’s natural juices to create a simple sauce.

We wanted to put the “snap” back in gingersnap cookies—not to mention a bit of spicy heat, too. To make sure our cookies deliver big crunch, we reduced the sugar to lessen the moisture content, increased the amount of baking soda (which created cracks in the dough where more moisture could escape), and lowered the oven temperature.

New England Fish Chowder

New England Fish Chowder
Most modern fish chowders are so rich with cream that you can hardly taste the fish. We like a chowder with a delicate, clean-tasting broth, so we start by gently poaching flaky cod in water flavored with salt pork, onions, and herbs, which creates a quick fish stock. We then add milk instead of heavy cream to keep the chowder light, fresh, and flavorful.

What it all came down to was balance: Mustards that were too acidic, too salty, or muddied with other flavors were downgraded by our tasters. Our favorite hit the balance just right.
